    Fire-caramelized ripe plantain with a cacao rum and cane honey reduction, topped with local cheese and aji chombo (Panamanian hot pepper).
  • Second Course
    Fresh corn tamal stuffed with smoked free-range hen, served with Panamanian sofrito sauce, aji chombo and pickled red onion relish (optional raisins).
  • Third Course
    Purple pigeon pea (guandú morado) rice with crispy pork cracklings, wood-grilled prawn in its own sauce, coconut oil, and cassava leaf powder.
